WINERY
BACKGROUND
The great plains of Central Spain
(yes this is where the rain in Spain falls mainly…)
is actually the largest wine growing region in the world.
Larger in fact, than Australia and Chile combined! More
importantly, it is here that we have ideal conditions for
producing grapes from limitless varietals…Cabernet,
Chardonnay, Viura, Merlot, Viognier, Tempranillo, Syrah,
Sauvignon Blanc, and more. This area is absolutely intent
on modernizing and is encouraging innovation and technological
advancement to a greater degree than anywhere in the world
at the present time. That is why it is here where our journey
of endless possibilities begins.
THE VINEYARDS
We found the ideal estate located
in Los Hinojosos, Cuenca. It is located 2500 feet above
sea level where cool nights and hot days from mid-August
to mid-September ensures a slow ripening. High active limestone
and calcium content and average soil depths of seven feet
combine with 15 year old vines to produce powerful and ultra
ripe grapes. This is the perfect fruit for making modern,
jammy wines.

VINIFICATION
The facilities for producing
Infinitus wines are state of the art and located right at
the top of the vineyards. To complete our mission, we then
added the boundless energy and limitless talents of our
very own Maverick winemaker – Lauren Rosillo. As a
twenty-something winemaker, Lauren grew up in the vineyards
of Castilla and has his own ideas about how a great wine
is made. He breaks all of the rules of traditional Spanish
winemaking and does so with gusto. Not coincidentally, this
rule-breaking means playing by the rules of the international
consumer. We like to say that he speaks wine in many languages,
but in reality, it is his wines that do the speaking for
him.

The Style
Full-flavored, International
wines for today’s consumer looking to enter the wine
market or to trade up into the endless possibilities of
a real wine. These are serious wines, yet you don’t
need a sommelier to understand them.
